Of course the exacting number 57 is also probably indicative of doing some proper scientific conversions which also recommends the text. I’ve run into several cookbooks that are abominable with their conversions for the United States and everywhere else–often those recipes don’t work well for the Americans who are dumb enough to measure by volume instead of weight.
