Just barely light enough to float. Definitely not as light and airy as the macaroons that followed.
Floaters or sinkers? I like mine a little on the dense side … the sort of which my great grandfather purportedly said, “They should throw them at the Arabs.”
@eatthispodcast Spoken like a true foodie. 😉 Definitely not a consomme, but that lovely, yet understated, chicken stock represented about 10 hours of care. The result was well worth the effort! The matzo may get the top billing, but the broth was the true star. The chicken last week wasn’t shabby either…
